Cucumber Salad Recipe

NBC Universal, Inc.

Everyone should have a few recipes that are easy to make & easy on the wallet! Thanks to Anna’s law student cousin, Gabriel — he shows you both. The best part… It’s French, so already we are on board. They start with a delicious tuna spread, perfect for entertaining or on its own. The secret here is, cream cheese! Next, they prove less is more with an open-faced goat cheese sandwich. It’s lightly toasted & finished with a drizzle of EVOO. Gabriel likes to pair it with a light cucumber salad with a creamy dressing that’s deliciously brightened with citrus & herbs. If you have a sweet tooth, how does a super easy homemade ice cream sound? If you have a blender or even a magic bullet., you’re in business. All you need is frozen fruit, Greek yogurt, and raspberry syrup.

PREPARATION:

  1. Place the peeled and sliced cucumber in a colander resting over a bowl and sprinkle with salt. Let it sit for 30 minutes, then firmly squeeze the cucumber in batches, eliminating as much water as possible. Place in a mixing bowl.
  2. In a small bowl, whisk together creme fraiche, extra virgin olive oil, and red wine vinegar. Taste and season with salt and pepper.
  3. Mix creme fraiche dressing over cucumbers and finish with freshly snipped chives.
