Learn how to make Anna’s delicious spatchcocked Cornish game hen with tasty dukkah pearled couscous and a pumpkin chutney.

INGREDIENTS:

  • 1 cup apple cider vinegar
  • ½ cup brown sugar
  • 1 onion, diced
  • ⅓ cup dried figs (or dates), chopped
  • 3 cups sugar pumpkin (or butternut squash), peeled and ½” dice
  • 1 tsp curry powder
  • ½ tsp mustard powder
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • 3 cardamom pods, optional
  • 1 cinnamon stick

PREPARATION:

  1. Combine all ingredients in a medium pot and simmer for 20 minutes.
  2. Add a little more water (1/4cup at a time) if necessary. Pumpkin should be tender but still have a little bite.
