Hub Cooking Club: Lobster Scampi
Chef Douglass Williams is making culinary and cultural connections with his South End restaurant Mida. Anna Rossi steps into the Clarke kitchen with him to cook up their notable Lobster Scampi dish in today’s Hub Cooking Club.
Lobster Scampi
Chef Douglass Williams, Mida
Serves 2 people
Ingredients:
4 oz Lobster stock
1 Tbsp rinsed and chopped capers
1 Tbsp minced garlic
1 Tbsp Mascarpone cheese
1 Tbsp Lobster butter (equal parts lobster innards and butter, blended)
10 Leaves fresh basil
1 Tsp Lemon juice
200 grams Fresh Linguine
Directions:
In a pot boil the pasta, while you start the sauce, and set aside
In a pan, sauté garlic and capers, add lobster stock, add mascarpone, bring to a boil.
Add the drained pasta to the pan, toss until covered.
Add basil and lemon juice, toss and serve.
